【酸甜苦辣鹹】免滷豆干 Marinated Fried Dried Tofu

去華人超市買了豆干,終於可以做兇媽的免滷豆干了!豆干八塊,斜切成三角形,熱油鍋,炸到起泡後,撈起瀝乾還在咻咻叫的豆干,丟進預先準備好的醬汁裡。

我自己抓的調味料和辛香料份量如下:

蔥*四支,切末

蒜*五粒,切末

香菜*一把,切末

醬油*250cc(薄鹽醬油200cc,鰹魚醬油50cc)

溫水*250cc

糖*四大匙

香油*一大匙

烏醋*兩大匙

辣椒*三根,切末

蒜蓉辣椒醬*1/4小匙

這道料理是利用炸過之後食材脫水的特性可以吸附水分,炸豆干放入醬汁中很快就入味了。豆干越小,醬汁調味應越淡,才不會過鹹。

炸過的豆干好香,吸附了醬汁更是美味。謝謝兇媽讓我嚐到這麼可口的菜餚。
